Zur Herstellung von Hot Break (HB) Paste m\u00fcssen die frischen Tomaten sofort nach dem Zerkleinern auf eine sehr hohe Temperatur (zwischen 85 und 100 \u00b0C) erhitzt werden. F\u00fcr Cold Break (CB) Paste m\u00fcssen die frischen, zerkleinerten Tomaten bei einer niedrigeren Temperatur (zwischen 65 und 75 \u00b0C) erhitzt werden.
